Aromatic slow cooked pork

Time to Cook: 2 Hours
Preheat Oven: GM 5, 190C/375F
900g (2lb) Pork Joint,
Marinade (2.5cm root ginger, 4 cloves garlic, 2tbsp soy sauce, 200ml orange juice, 2tbsp hoisin sauce)
Method: Cut joint into 6-8 large chunks. Mix the marinade ingredients together and stir in pork chunks. Place in an oven proof casserole dish, cover and cook for approx 2 hours until meat is very tender. Serve with rice and stir fry vegetables.
Stir Fried Rice Noodles

1 x Packet Rice Noodles
3 x Cloves Garlic (finely chopped)
1 x Large Onion (sliced)
Cooked and de-boned chicken (or any meat/seafood of choice)
2 tablespoons Chicken Stock
2 tablespoons Sesame Oil
2 tablespoons Dark Soy Sauce
3 x Sliced Carrots
1 x Pak Choi
1 x Pepper
Salt and Pepper to taste
1. Heat oil in a large pan.
2. When hot add onion and garlic and stir until coated with the oil.
3. Add chicken and carrots and heat through.
4. Add noodles, soy sauce, pak choi, peppers (and optional chillies) and cook on a high heat for 3 – 4 mins.
5. Season to taste. Serve immediately.

Christmas Sausages (serves 4)
This traditional Christmas favourite is versatile enough to be enjoyed all year round.
Ingredients
8 thick Lincolnshire Sausages
3 large Parsnips
4 large carrots
A dozen small roasting potatoes
Olive Oil
2 cloves of garlic
Oregano, Rosemary, Thyme
Salt and Pepper
Pre-heat oven to 225 C Gas mark 8
Place the sausages into a metal roasting tray.
Slice unpeeled parsnips, carrots and potatoes lengthways and place in a mixing bowl. Splash liberally with olive oil and add the herbs and seasoning. Crush the garlic, add to the bowl and mix the contents with a wooden spoon until the veg is lightly covered. Add the veg to the sausages in the roasting tray and place in the oven. Roast for 45-50 minutes, shaking the contents occasionally until the sausages are dark brown.
